{Menu Monday} -- Week 3 Dinner Menu Plan

Are you a resolutions kind of person?  Do you make one or more resolution at the start of the year?  I'm not big into making actual resolutions, but at the start of the year I take stock of life and see what changes I'd like to make for the next year.  But, this is the time of year where it starts to get tricky, right?   If you're like me, you've done pretty good with the changes, but as life gets busy, things start to backslide just a tad bit. 

At the start of the year, I vowed to get out of the recipe rut we had been stuck in over the last several months.  I started planning my menus for the week on Sunday evenings.  Recently, however, I've had to move around or delay menu items that were planned.  It's a little tough at times to move to a city with many, many more great restaurant choices and, at the same time, try to make more home-cooked meals.  Come Thursday night, all those take out menus start calling my name.  Anybody else have that problem on Thursdays?  What's the deal with Thursday night?  Everyone in my house, including me, is completely toast by then.  Same at your house? 

These Weekly Menu Plans have kept me organized and stopped the last minute question of "what's for dinner?".  And, if the pizza take out craving hits our house on Thursday night, I know that we have the ingredients on hand for a delicious weekend lunch or dinner. 



Monday: Baked Crunchy Taco Casserole  These yummy tacos were a big hit with my kids.  We loved the crunchy tacos with the melty, gooey cheese.  By simply baking the tacos, it definitely elevated it to a new taco level!



Wednesday:  Grilled Cuban Sandwich with Trader Joe's Latin Black Bean Soup.  Simple soup and sandwich nights are our go-to on a busy night.  I didn't have any pork on hand for the sandwich, so I substituted deli turkey.  It might have not been a traditional Cuban, but my bunch gobbled it right up. 



Thursday: Tofu Fried Rice  My kids love tofu.  Like, they fight over it when I make it.  What I love about tofu is that it takes on any flavor that you cook it with.  Our favorite way to enjoy tofu is in Asian food.  This fried rice recipe is a great substitute for take-out, without as much oil as typical restaurant fried rice. 




Friday:  Avocado Basil Pasta  I'm so thankful to have found this recipe and can't wait to try it this summer with fresh tomatoes.  It would be fantastic for a girls luncheon or baby shower.  We'll definitely be making it again very soon!

I have the same Thursday slump. I tend to pat myself on the back for cooking 5 whole days and feel like I need to reward myself. But I'm such a stickler, that I won't let myself veer away from my pre-planned menu, so I convince myself I can wait one more day! That pasta looks delicious! Like you said, I'm sure it will only get better with garden-fresh tomatoes and basil :)
